4 medium russet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Wash and dry the potatoes. Cut slits in the potatoes, being careful not to cut all the way through.

In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary, and dried oregano.

Place the potatoes on the baking sheet and brush them with the olive oil mixture, making sure to get the mixture into the slits.

Bake in the preheated oven for about 45-50 minutes, or until the potatoes are tender and crispy.

Remove the potatoes from the oven and immediately sprinkle with the grated Parmesan cheese, salt, and pepper.

Garnish with fresh chopped parsley before serving.
