Ham and Corn Chowder Recipe


Ingredients:

2 tablespoons butter

1 onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cups corn kernels (fresh, frozen, or canned)

2 cups cooked ham, diced

4 cups chicken or vegetable broth

1 cup heavy cream or whole milk

2 potatoes, peeled and diced

1/2 teaspoon dried thyme

Salt and pepper to taste

Optional: chopped parsley for garnish

Directions:

Sauté Vegetables: In a large pot, melt butter over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are softened.


Add Corn and Ham: Stir in the corn and diced ham. Cook for a few more minutes.


Add Broth and Potatoes: Pour in the broth and add the diced potatoes. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.


Season: Add thyme, salt, and pepper. Adjust the seasoning to your taste.


Add Cream: Stir in the heavy cream or milk and heat through, but do not boil.


Serve: Ladle the chowder into bowls. If desired, garnish with chopped parsley.
