Oven Roasted Smoked Sausage and Potatoes


1 lb smoked sausage, sliced into 1/2-inch pieces

4 large potatoes, washed and cut into 1-inch cubes

1 large onion, chopped

2 tablespoons olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, for garnish


Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

In a large bowl, combine sausage, potatoes, and onion. Drizzle with olive oil and sprinkle with paprika, garlic powder, salt, and pepper. Toss to coat evenly.

Spread the sausage and potato mixture in a single layer on the prepared baking sheet.

Roast in the preheated oven for 45-50 minutes, stirring halfway through, until potatoes are golden brown and tender.

Garnish with fresh parsley before serving.
