๐Ÿ”ช Ingredients:


3 large or 4 medium eggs ๐Ÿฅš

1 lemon yogurt ๐Ÿ‹

Sugar (2 measures of yogurt) ๐Ÿฌ

Flour (3 measures of yogurt) ๐Ÿž

Sunflower oil or olive oil (1 measure of yogurt) ๐ŸŒป๐Ÿซ’

1 sachet of baking powder (16 gr of baking powder) ๐Ÿง

Lemon zest ๐Ÿ‹

Butter and flour (to grease the pan) ๐Ÿงˆ

Icing sugar to decorate (optional) ๐Ÿฐ

๐Ÿ‘ฉ‍๐Ÿณ Preparation:


Preheat the oven to 150ยบC (300ยบF).

Beat the eggs and then add the sugar, lemon yogurt, sunflower or olive oil, and finely grated lemon zest (without the white part, as it can be bitter). Mix until well combined.

In a separate bowl, combine the flour and baking powder.

Gradually add the flour mixture to the wet ingredients and mix well until you achieve a smooth batter.

Grease a cake mold with butter, then lightly flour it, shaking off any excess flour. Pour the batter into the mold.

To enhance the effects of the baking powder, allow the batter to rest for about 15 minutes before placing it in the oven.

Bake the cake. It's ready when a toothpick inserted into the center comes out clean. Note that baking time can vary depending on your oven.

Once baked, remove the cake from the oven and let it cool slightly in the pan. Gently run a knife around the edges of the mold to loosen the cake. Carefully transfer it to a cooling rack.

For an optional touch, decorate the cooled cake with a dusting of icing sugar.
