Ingredients 


One whole chicken 


1 tbsp olive oil 


1 garlic knob 


3 tbsp butter 


1 tsp thyme 


1 tsp basil 


Salt and Black pepper 


1 lemon 


Method 


• Preheat oven to 400 F 


• Cut top of garlic knob and drizzle a little salt and oil. Fully cover in foil and place in oven for 40 minutes 


• After 40 minutes remove from oven and squeeze into bowl. Mix in butter, thyme, basil, salt and black pepper. 


• Pat dry the chicken and lightly salt the bird. Then apply the butter mix all over the chicken.  


• Turn up oven to 425F and place the chicken in for 10 to 12 minutes before turning it down to 350 F for an 1 hr 20 minutes. (During the cooking process, baste chicken with the juices from the chicken)
