Tortilla Casserole



Tortilla Casserole 

**Ingredients:**

- 1 lb. ground beef

- 1/2 cup diced onion

- 1 pack taco seasoning mix

- 2 cups shredded cheddar cheese

- 1 can refried beans (warmed in the microwave for easier spreading)

- 1 cup prepared rice (e.g., Minute Rice)

- 1 can Mexican blend corn (drained, use about half the can)

- 4-5 large flour tortillas

- 8 oz of thick chunky salsa (mild or hot, your choice)

**Instructions:**

1. Preheat your oven to 350°F (175°C).

2. In a skillet, brown the ground beef. Drain any excess fat.

3. Add the diced onion to the cooked beef and sauté until the onion becomes translucent.

4. Stir in the taco seasoning mix and follow the package instructions for adding water or other ingredients.

5. In a separate bowl, combine the warmed refried beans and prepared rice.

6. In a large casserole dish, start assembling the layers. Begin with a layer of flour tortillas, tearing them if necessary to fit.

7. Spread a layer of the refried bean and rice mixture over the tortillas.

8. Add a layer of the beef and onion mixture on top of the beans and rice.

9. Sprinkle some shredded cheddar cheese and Mexican blend corn on top of the beef.

10. Repeat the layers until you've used up all your ingredients, finishing with a layer of tortillas on top.

11. Pour the chunky salsa evenly over the top tortilla layer.

12. Sprinkle the remaining shredded cheddar cheese over the salsa.

13. Cover the casserole dish with foil and bake in the preheated oven for about 25-30 minutes, until it's heated through and the cheese is melted and bubbly.

14. Remove from the oven, let it cool slightly, then slice and serve your delicious Tortilla Casserole.
