Speedy Gourmet Caramels


1/2 cup unsalted butter

1/2 cup light corn syrup

1/2 cup granulated sugar

1/2 cup packed light brown sugar

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon sea salt (optional, for sprinkling on top)


Line an 8-inch square pan with parchment paper, allowing excess to overhang the sides for easy removal.

In a large microwave-safe bowl, combine butter, corn syrup, granulated sugar, brown sugar, and sweetened condensed milk.

Microwave on high for 6 minutes, stirring every 2 minutes, until the mixture is bubbling and turns a light golden brown.

Carefully remove from the microwave (the bowl will be hot) and stir in vanilla extract.

Pour the caramel mixture into the prepared pan. If desired, sprinkle sea salt over the top of the caramel for a salted variation.

Allow the caramel to cool completely at room temperature or in the refrigerator. Once set, use the parchment paper overhang to lift the caramel out of the pan and cut into squares.
