250g dark or milk chocolate

230g butter

½ cup plain flour

½ cup cocoa powder

150g mint chocolate bar like Aero or Peppermint Crisp 

3 eggs

250g caster sugar

1 tsp extra peppermint essence if you like it very minty 

Pinch of salt

Chopped nuts 

Pistachio bits, optional


Preheat your oven - 160°C 

Grease and line a tin to bake

Melt butter and chocolate in micro or gently in bowl over a pan of simmering water 

Add flour and cocoa powder into a bowl.

Chop your mint chocolate into tiny pieces and add half into the bowl with the flour and cocoa mixture and set aside.

Whisk together the eggs, sugar, mint extract and salt in a separate bowl

Combine butter/choc mix into the bowl of egg mixture and whisk 

Slowly add flour, cocoa mixture, pistachio or other nuts and your mint pieces and gently fold together

Pour the brownie batter into the prepared tin

You can sprinkle over grated  mint choc, pistachio or Choc drizzle 

Bake for 45 minutes until done
