Slow Cooker Chipotle Chili
Ingredients:
2 pounds ground beef (or ground turkey for a leaner option)
1 large onion, chopped
3 cloves garlic, minced
2 (15-ounce) cans black beans, drained and rinsed
2 (15-ounce) cans kidney beans, drained and rinsed
2 (14.5-ounce) cans diced tomatoes
1 (6-ounce) can tomato paste
1 chipotle pepper in adobo sauce, minced (adjust to taste)
1 tablespoon adobo sauce (from the chipotle can)
2 cups beef broth (or vegetable broth for a vegetarian version)
2 teaspoons ground cumin
2 teaspoons chili powder (adjust to taste)
1 teaspoon smoked paprika
Salt and black pepper to taste
Optional toppings: shredded cheese, chopped green onions, sour cream, diced avocado, and fresh cilantro
Directions:
In a large skillet, brown the ground beef (or turkey) over medium-high heat. Drain any excess fat and transfer the meat to your slow cooker.
Add the chopped onion and minced garlic to the slow cooker with the cooked meat.
Add the drained and rinsed black beans, kidney beans, diced tomatoes, and tomato paste to the slow cooker.
Stir in the minced chipotle pepper, adobo sauce, beef broth, ground cumin, chili powder, smoked paprika, salt, and black pepper.
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The longer it cooks, the more flavorful it will be.
Before serving, taste the chili and adjust the seasonings if needed. If you prefer more heat, you can add additional chipotle pepper or adobo sauce.
