Accordion potatoes recipe


6 medium potatoes

30 ml (2 tbsp) olive oil

1 g (1 tsp) rosemary

1 g (1 tsp) thyme

4 cloves garlic

50 ml (3 tablespoons) olive oil

4 slices cheese, cut into squares

Salt to taste

Pepper to taste


Preheat the oven to 180°C/360°F.

Place a potato on a cutting board and place cooking utensils on both sides of the potato. With a sharp knife, make deep vertical cuts, but don’t cut the potato completely.

Place the potatoes cut side up in the baking dish.

In a small bowl, mix 2 tablespoons of olive oil with a little salt, drizzle the potatoes and bake for 25 minutes.

Place the garlic cloves on the cutting board, add the rosemary and thyme, and chop everything very well. Place this mixture in a small bowl, add 3 tablespoons of olive oil, season with salt and pepper and mix well.

Brush the potatoes with this mixture and insert the squares of cheese into the potato cups.

Bake another 20 minutes.
