4 boneless, skinless chicken breasts

2 cups mixed vegetables (such as bell peppers, broccoli, carrots, and zucchini), chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried herbs (such as thyme, rosemary, or Italian seasoning)

Salt and pepper to taste

Instructions:


Preheat your oven to 425°F (220°C).

Place the chicken breasts and chopped vegetables on a large baking sheet.

Drizzle the olive oil over the chicken and veggies, then sprinkle with garlic powder, dried herbs, salt, and pepper.

Use your hands or tongs to toss everything together, ensuring the chicken and veggies are evenly coated with the oil and seasonings.

Spread the chicken and veggies out in a single layer on the baking sheet.
