Pasta Salad


*can Add shredded Rotisserie Chicken


- 1 box of Rotini Pasta (or any other medium size pasta of choice)

- 1 English cucumber, chopped

- 1 cup grape Tomatoes, halved

- 1 Bell Pepper, chopped

- 1 small Red Onion, finely diced 

- 1/4 cup sliced Black Olives (optional)

- Fresh Parsley, chopped

- Garlic Salt to taste (or Salt and Pepper)

- 1 cup Feta Cheese crumbled, more or less to taste

Homemade Italian Dressing:

- 1/2 cup Vegetable Oil

- (or half Olive Oil, half Vegetable Oil)

- 3 tbsp Red Wine Vinegar

- 1 tsp Dijon Mustard

- 1 tsp Honey 

- 1/2 tsp Italian Seasoning 

- 1/2 tsp Garlic Powder

*Can use store bought 


1. In a large pot, boil Pasta in salted water until al dente (firm) according to package directions. Drain and rinse under cold water to cool.

*Alternately: use Chicken Bouillon instead of Salt for added flavor.

2. In a large bowl, combine cooked and cooled Pasta, Vegetables, Italian dressing, and fresh parsley. Toss well to coat.

3. Season with Garlic Salt to taste and gently stir in Feta Cheese.

4. Refrigerate for at least 2 hours before serving to allow the flavors to blend and the Pasta to soak in the dressing.
