Apple Pie Enchiladas - Incredibly easy to make and are Out Of This World Good!
Ingredients:
2 tablespoons of butter
2 tablespoons of all-purpose flour
2 cups of milk
2 teaspoons of ground cinnamon
2 tablespoons of sugar
2 cups of shredded apple pie filling
10 (6-inch) tortillas
1/2 cup of chopped pecans
1/4 cup of melted butter
Instructions:
1. Preheat oven to 350°F. Grease a 9x13 baking dish.
2. In a large saucepan, melt butter over medium heat. Once melted, add in the flour and whisk until a paste forms.
3. Slowly whisk in the milk and stir until thickened.
4. Remove from heat and stir in the cinnamon and sugar.
5. In a separate bowl, mix together the apple pie filling and chopped pecans.
6. Place a few spoonfuls of the apple pie filling mixture in the center of each tortilla. Roll up and place seam-side down in the baking dish.
7. Pour the milk mixture over the enchiladas and top with the melted butter.
