Blackberry Cobbler


Oh yea baby ! Add some ice cream or whipped topping and dig in !!! 😍


Ingredients 


For the Filling:


24 oz. fresh blackberries, rinsed

1 cup white sugar

3 tbsp. cornstarch

3/4 cup water


For the Topping:


1 1/2 cups all purpose flour

1 tbsp. white sugar

1 1/2 tsp. baking powder

1/2 tsp. salt

1/2 cup (1 stick) chilled unsalted butter, chopped finely

1/3 cup buttermilk


Instructions:


1. Preheat oven to 350F and spray an 8 x 8 inch baking pan with baking spray.

2. Combine blackberries and sugar in a large saucepan over medium-high heat and cook until mixture begins to bubble, stirring occasionally.

3. In a small bowl, whisk together cornstarch and water until combined and add to the saucepan.

4. Stir and bring mixture to a low boil. Let cook for about 3-5 minutes, until filling has thickened.

5. Pour filling into the prepared baking pan and set aside. In a small bowl, whisk together flour, sugar, baking powder, salt, Use a pastry cutter to cut the butter into the dry mixture until it resembles coarse crumbs.

6. Add buttermilk and stir until just combined. Drop the topping over the filling by the spoonful and bake for 30-35 minutes, until topping is golden in color.

7. Serve with vanilla ice cream.
