1 unbaked 9-inch pie crust

1 1/2 cups cooked and mashed sweet potatoes (about 2-3 medium sweet potatoes)

3/4 cup granulated sugar

1/4 cup unsalted butter, softened

2 large eggs

1/2 cup evaporated milk

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp salt


Preheat your oven to 350°F (175°C).

In a large bowl, cream together the mashed sweet potatoes, sugar, and softened butter until well combined.

Add in the eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt, and mix until fully incorporated.

Pour the filling into the unbaked pie crust and smooth out the top with a spatula.

Bake for 50-60 minutes, or until the filling is set and the crust is golden brown.
